Pecan Macaroons

from Woman’s Institute Library of Cookery, Volume 4


1 egg white

1 cup brown sugar

1 cup pecan pieces

1/4 teaspoon salt


Beat the egg white until stiff and add the sugar gradually, beating constantly. Fold in the pecan pieces, add the salt, and then drop from the tip of a spoon 1 or 2 inches apart on a cookie sheet covered with buttered paper. Bake in a moderate oven until delicately browned.

Makes 1 1/2 dozen cakes

Raisin and Pecan Cake

from Fifty-Two Sunday Dinners

1/3 cup shortening

1 cup granulated sugar

3 eggs unbeaten

1 cup pecan meats

2/3 cup raisins

2 cups pastry flour

4 teaspoons baking powder

3/4 cup milk

grated rind of half an orange

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt


Cream shortening, add sugar gradually, stirring constantly, add eggs, one at a time and beating each in thoroughly before adding another. Pass pecan meats and raisins through a food processor, then mix with flour sifted with baking powder, salt and spices; add alternately to first mixture with milk, beating constantly. Turn mixture into a well-greased tube pan and bake thirty-five to forty minutes in a moderate oven. Spread with Caramel Frosting with Nuts.
