Strawberry Meringue Cake (Mostachon)

Ingredients

for the cake

1 cup crackers Ritz type chopped

1 cup pecan chopped

½ cup egg whites

¾ cups of sugar

1 tsp of vanilla extract

½ tsp of baking powder

frosting

1 package of cream cheese 

1 tsp of vanilla extract

½ cup table cream (frost it, so it can fluff up)

½ cup of powdered sugar

15 strawberries 

INSTRUCTIONS

For the cake

  1. Preheat the oven to 300 degrees F. Spray a pan with nonstick cooking spray.
  2. In an electric mixer on high speed, beat the egg whites until soft peaks form. Add the sugar slowly, then the vanilla, baking powder while beating, about 2 more minutes. 
  3. Turn the power off and fold the pecans and crackers. Transfer to the prepared pan. Bake for 30 – 35 minutes

For the frosting

  1. In an electric mixer, beat the cream cheese, frosted table cream, powdered sugar and vanilla extract until soft peaks form and the mixture is smooth.

To assemble

  1. Remove the cake from the oven. Let cool for 15 minutes. Transfer the cake to a cake stand or plate. Using an offset spatula spread the frosting all over the cake. Garnish with the strawberries and serve.
